30-Minute Vegetarian Dinner Recipes (1)

“What’s for dinner?” and “When is dinner going to be ready?” are two phrases that I hear way to often in this house! And usually the answer to both is, “I don’t know!”. As much as I love to cook, dinner is often a struggle for me. I’m not a great meal planner so our dinners are often last minute and sometimes take much more time than I would like. I’m usually starving by the time I get home and fill up on snacks before dinner even gets on the table.

So, for all those reasons I decided to put together this list of vegetarian dinner recipes that all take 30 minutes or less! I hope you find it as useful as I do!
