This chicken and rice soup is ready in 30 minutes, and packs a ton of flavor.

Ingredients you need for the Instant Pot Garlic Parmesan Chicken Rice Soup

1 lb. (450g) skinless, boneless chicken thighs1 small onion, minced6 garlic cloves, sliced2 tablespoons butter2 teaspoons crushed red pepper flakes2 teaspoons kosher salt, divided2/3 cupwhite rice, preferably short-grain, rinsed8 cups (2l)low sodium chicken broth3 cups spinach leaves1/4 cup grated parmesan cheeseJuice of one lemonFreshly ground black pepper

Directions

1.To make the garlic oil: Heat butter in the insert of your Instant Pot in saute mode. Add sliced garlic and cook until golden brown, 3–5 minutes. The garlic will continue to cook and darken slightly after it’s off the heat. Transfer to a small bowl, leaving one tablespoon garlic oil in the insert. Stir 2 teaspoons crushed red pepper flakes into the melted garlic butter and set aside.

2. To make the parmesanchicken and rice soup: Cook onion in garlic oil in the insert of the Instant Pot, still on saute mode, stirring occasionally until onion is translucent and beginning to take on some color, about 3-5 minutes.

3.Stir in rice and give a quick stir to coat rice with onion and butter. Add chicken, a pinch of salt, and pour in chicken stock and stir to combine. Close the lid and cook on pressure mode for 20 minutes.

4. Do a quick release and, using tongs, transfer chicken to a plate and let sit until cool enough to handle. Shred meat with two forks. Keep the Instant Pot on reheat mode while you’re prepping the rest of your ingredients (this will concentrate the flavor of the broth).

5.Add spinach, parmesan and shredded chicken to the insert. Continue to reheat, stirring occasionally, until spinach is wilted, cheese is combined and chicken is warmed through, about 4 minutes.

6.Turn off the Instant Pot. Squeeze in lemon juice, season with salt if needed, and stir to combine. Divide the Instant Pot chicken and rice soup among bowls. Drizzle with the reserved garlic-chili butter (reheat quickly if necessary to melt butter), then top with a few grinds of black pepper. Enjoy!

Tips on how to cook chicken in an Instant pot

If you just started using an Instant Pot, or any electric pressure cooker, these easy tips will help you with your next Instant Pot chicken dinner recipe.

  • Chicken thighs are more versatile and easier to cook in the Instant Pot. All cuts of chicken are okay for the Instant Pot, but thighs are the most forgiving. Chicken thighs being a fattier cut, they do not tend to dry as quickly as chicken breasts for instance, even after an extra two minutes of cooking.

  • Avoid mixing up bone-in and boneless chicken cuts. Chicken on the bone takes longer to cook than chicken off the bone. You’ll get inconsistent results if you try to cook chicken breasts and chicken thighs in the Instant Pot at the same time.

  • Cook chicken breasts whole in the Instant Pot. This will prevent overcooking the chicken breasts. Even if a recipe calls for chunks or cubes of chicken breast, it’s best to cook the meat whole and then cut it up after cooking since small chunks of chicken cook through faster than the whole breast.

  • If your chicken breast is undercooked, you don’t have to pressure cook it again. This can happen especially when you cook frozen chicken breasts directly in the Instant Pot. Unless the chicken breast is severely undercooked, it is not recommended to pressure cook it again because you risk to overcook it and lose moisture. If your chicken breast is below 160°F (71ºC), quickly place your chicken breast back in the Instant Pot. Close the lid and let the residual heat cooking the chicken breast for 3 to 5 minutes.If the Instant Pot hascompletely cooled down by the time you realize your chicken breasts is undercooked, you can heat it up before placing the chicken breast back in. Just make sure to turn off the heat before you place the chicken breast back in to avoid burning the exterior and ruin your Instant Pot chicken dinner!
