Those of you who know me well, know that like any mom, I do generally make large batches of food. No matter what type of recipes I cook. Reheating a recipe saves me tons of time during a busy week.

Plus, it's very practical. As a result, my friends know that I have the answer to this all important question.

If you've made homemade fudge like butterbeer fudge or this one, it might last you from 1 -1.5 weeks unrefrigerated. In general, I find homemade fudge too good to be stored incorrectly. Therefore, in order to minimize any risk of the fudge going bad or you getting food poising, take these steps:

  1. Cut the fudge into little squares as they fit better into an airtight container. The air tight container will keep all moisture out. Place sheets of baking paper in between fudge layers. This way they won't stick to each other.
  2. Store it in your kitchen at room temperature for a maximum of three days.
  3. If you still haven't finished the fudge by the third day, stick the fudge into the fridge. With that, you'll extend its shelf life by at least a week.

You can also put the whole tray of fudge in the fridge. However, you'll have to make sure you have enough space.

In short, yes, you can freeze fudge. However, the answer is a bit more involved. There are a couple of steps when it comes to freezing fudge. Especially, when it's a homemade fudge recipe.

Before I start giving you details about freezing fudge, we have to differentiate. Freezing store bought fudge is very different to freezing fresh homemade fudge.

The reason for this is because store bought fudge usually contains preservatives and stabilizers.

In sum, if you wish to extend the shelf life of your fudge, then do it by all means. Put it in the fridge.

In fact, if your room temperature exceeds 70°F / 21°C then I definitely recommend you placing the fudge in the fridge. If you live in a hot country or if the weather is too warm right now, also opt for the fridge option.

Again, in order to answer this question, we must distinguish between freshly homemade fudge and the store bought one. Let's start with the store bought fudge.

As mentioned above, store bought fudge usually contains all sorts of additives to make ingredients last longer. Of course, if you have store bought fudge leftovers, the shelf life is going to be longer (as it is designed to do so).

Hence, store fudge in an airtight container in a cooled place in your kitchen. Unrefrigerated, it usually lasts anywhere from 1 - 2 weeks.

You can also use plastic wrap. Just make sure you cut the fudge into appropriate sizes so that they fit into your freezer. Alternatively, you can also use aluminium foil.

However, this is not my preferred method of storing ingredients because it's not see-through. You'll have to label your food in this case.

Still, I prefer using sealable see-through freezer bags. Just make sure you press all of the air out before you seal the freezer bag.

    1. Slice the fudge into individual portions.
    2. Wrap each piece up individually in aluminum foil.
    3. Place the wrapped or packaged fudge in an airtight freezer bag. Squeeze out any excess air and seal the freezer bag. Alternatively, you can place the fudge blocks in an airtight container.
    4. Label the bag with a Sharpie pen to mark the date of freezing as well as that it's fudge. Done!

how to thaw frozen fudge

It's a very simple process. Take out the frozen fudge out of the freezer, but don't take the fudge out of the container or the wrapper/sealable bag.

When the fudge will defrost, you'll see moisture on the sides of the wrapper, not on the fudge. Once you allow the fudge to thaw, just let it stand at room temperature until it defrosts completely.
