What is Gnocchi?

Gnocchi is an Italian dumpling made from potatoes and flour. These soft dumplings are a hearty addition to soup or can be served with your favorite pasta sauce or simply brown butter and fresh herbs.

Where to Buy Gnocchi?

You can find fresh, frozen or dried gnocchi in any grocery store. I generally buy the dried and it’s located near the pasta. Obviously fresh and frozen will be in their relative departments.

    FAQs

Do you have to cook gnocchi before putting in soup? ›

Like my Broccoli Cheddar Soup, this soup is fast and easy enough for a weeknight. We used ready-made, quick-cooking gnocchi (meaning you don't need to cook gnocchi before adding it to soup) and sauteed the meat and veggies first so that the soup didn't need to simmer as long. It's Delicious Left Over.

How do Italians serve gnocchi? ›

Strong and mild flavors work equally well, which is why gnocchi is just as often served with a butter sauce as it is with meaty or spicy sauces. Try pairing gnocchi with ingredients of different textures to really highlight the soft, pillowy texture of the dumplings.

Can you cook gnocchi in sauce instead of boiling? ›

There is no need to pre-cook the gnocchi. It'll cook in the sauce. The sauce is meant to be quite thick, but if you find it gets too dry before the gnocchi is cooked, add in another splash of chicken broth or wine.

What should you not do when making gnocchi? ›

Don't overwork the dough: When making gnocchi dough, it's important not to overwork it. Overworking the dough can make the gnocchi tough and chewy. Mix the ingredients together just until the dough comes together, and then stop mixing! You're not kneading bread here.

How to keep gnocchi from getting soggy in soup? ›

How do you keep gnocchi from getting soggy in soup? Add gnocchi toward the end of the cooking process to keep them from becoming soggy and mushy. The potato dumplings don't take long to cook, and they absorb a lot of moisture as they sit.

Is gnocchi more unhealthy than pasta? ›

    Nutritional Value

Believe it or not, regular pasta is actually more carb-heavy than gnocchi, coming in at around 2 times the amount of carbs per serving. Gnocchi is also notorious for having a lot more sodium, with over 200 grams of it per serving. Regular pasta doesn't have nearly as high of a sodium content.

What potato is best for gnocchi? ›

I find baking potatoes to be dry and floury. My favorite potatoes for gnocchi are Yukon gold or other yellow potatoes. They have a rich, buttery flavor and a creamy, fluffy texture. Flour: A judicious amount of unbleached all-purpose flour helps to turn the potatoes into dough.

What is the best flour for gnocchi? ›

Type 00 vs all-purpose vs bread flour

You need to do plenty of that for homemade pizza dough, but you don't want to do much kneading at all when making gnocchi. Italian type 00 flours like Caputo and Anna brands produce a great result. Make sure you're buying 00 labeled for pasta and not labeled for pizza making.

What is traditionally served with gnocchi? ›

The Gnudi, or spinach and ricotta gnocchi, is a typical recipe from Tuscany, usually served with a simple tomato sauce or with butter and sage. In fancy restaurants, sometimes these are served with very special aged parmesan cheese like pecorino or with a slice of lard that melts in contact with the hot gnocchi.

Why does my gnocchi fall apart when I cook it? ›

My Gnocchi Are Falling Apart When I Cook Them

Try adding another 1/4 cup of flour and try again. A good idea is to have a pot of water on the go before you roll out and shape your gnocchi.

Who makes the best gnocchi? ›

Both Trader Joe's and Capello's sweet potato gnocchi were delicious in flavor and texture, but we like that Cappello's product offers the ability to pair with any sauce or topping.

What happens if you boil gnocchi too long? ›

Don't overcook. If your gnocchi cook for too long, they can absorb too much water and become dense and chewy. Gnocchi cooking's best in a large pot with plenty of salted water. Gnocchi are dipped into boiling water after being slightly shaken with the flour.

Does packaged gnocchi need to be boiled? ›

(To re-hydrate, most packages recommend boiling the gnocchi for about three minutes before saucing, topping, and eating.) This low hydration might be responsible for what the San Francisco Chronicle called the “too firm” texture, but for many recipe developers, it's gnocchi's superpower.

Do you have to boil packaged gnocchi? ›

Both boiling and frying are good for gnocchi, but boiling is the most traditional method—and it's quick and easy. The downside is that boiling can result in gummy, waterlogged gnocchi if you cook them too long.

    Does gnocchi need cooking? ›

How to prepare gnocchi. Poach gnocchi in batches in a pan of lightly salted water for 2-4 minutes. Cooked gnocchi will float to the top. Strain and serve immediately with a good pasta sauce.

    Should gnocchi be cooked? ›

Pre-packaged gnocchi should be cooked in boiling water – just like any other pasta. Store-bought gnocchi is often quite salty. Be sure to look at your gnocchi package – if the nutrition facts show a high sodium content, hold off on salting the cooking water.
