Quick and Easy Home Fries Recipe (1)

Brunch has become increasingly popular these days, which is great because I love brunch food, but it also means there’s usually long lines. This Sunday, skip the brunch lines and make your own at home, and make sure to include these Quick and Easy Home Fries!

Why You’ll Love This Home Fries Recipe!

  • They are quick and easy to make. This recipe calls for the potatoes being microwaved, rather than boiled, so that cuts down a lot on the preparation time!
  • They’re versatile and meal prep friendly. You can enjoy them as a breakfast/brunch side dish or you can add them to breakfast tacos and burritos. I like to make a big batch on the weekend and then I can just heat them in the microwave, or on the stovetop, each morning.
  • Minimal ingredients are required. All you need to make these this Home Fries recipe is potatoes, oil and a few spices.

Quick and Easy Home Fries Recipe Ingredients

  • Potatoes – I like to use russet potatoes for home fries because their flavor is kind of like a blank canvas and they crisp up nicely. You can use whatever kind of potatoes you like, Yukon gold would also be a great option, although they tend to be sweeter in flavor.
  • Oil – I recommend a neutral flavored oil for these home fries, but they will work with olive oil if that is all you have. Examples of neutral flavored oils are: avocado, canola, grapeseed, safflower or sunflower.
  • Spices – I like to season my home fries with paprika, granulated garlic and a little bit of cumin. The paprika is key for giving them the nice golden orange color.
  • Salt and Black Pepper – Season your home fries with salt and black pepper, to taste. I usually find that potatoes need a bit more salt than I would think.

How To Make Restaurant Style Home Fries

  1. Thoroughly wash and dry your potatoes. I like to make these home fries with the skin still on because the skin gets nice and crispy, and it’s much quicker not to peel them! If you prefer to have your potatoes peeled, I would recommend either peeling the potatoes, dicing them and boiling them until just fork tender OR you can microwave them like normal and then use a potato peeler to peel the skin off.
  2. Use a metal fork to carefully prick holes in all sides of the potatoes. Place potatoes on a microwave safe plate and microwave potatoes until fork tender, but not falling apart. You want the potato to be fully cooked but also have a little give in the middle. I usually just use the baked potato button and cook the potatoes for about 2-3 minutes, flip and cook for another 2 minutes or so. You will start to hear them sizzling a little and you should be able to smell them.
  3. The potatoes will be really hot, so you can either carefully dice them right away or allow them to cool before dicing. You want to cut the potatoes into bite size pieces, you can make them whatever size you like.
  4. Heat a large skillet over medium heat and add the oil. Let oil heat up and then add the potatoes, paprika, granulated garlic, cumin, salt and pepper. Mix everything together and make sure the potatoes are completely coated with the oil and seasonings. Use a spatular to press down the potatoes in a single layer and let them cook for about 3-4 minutes without touching them.
  5. Flip potatoes and let cook on the other side until potatoes are golden brown. The longer you cook them, the crispier they will get, so it’s up to you! Sometimes I like to sprinkle a little extra salt on them after they’ve finished cooking, totally optional though.

FAQs

Should you boil potatoes before frying them? ›

There are lots of recipes that call for par-boiling the potatoes first to reduce the amount of cooking time, but it's an extra step and an extra pan to wash. If you cook the potatoes over medium heat and keep them covered for most of the cooking time, the lid traps in steam, which helps cook the potatoes through.

Why do people soak potatoes before making fries? ›

Secret number one in perfecting homemade french fries: soaking the potatoes removes the starch and allows the fries to become crispy and evenly brown. You don't want to skip this step!

How long should you soak fries before frying? ›

Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.) When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels.

What is the secret to good fries? ›

The Double-Fry Method

When it comes to the actual cooking, you want to fry the french fries twice. The first round is at a lower temperature to cook the inside of the potato and the second time you'll use a higher temperature to make the fries golden brown and crispy.

Should you boil fries before frying? ›

A properly made fry must hit the oil twice--once at a lower temperature, and then again at 350 degrees Fahrenheit--to get the perfect creamy interior and crunchy exterior. Before all that, though, the secret is to briefly poach them in boiling water (or "blanch" them) before they go into the hot oil.

What happens if you don't soak potatoes before frying? ›

The main reasons to cut the potatoes and pre-soak in water are: To allow the excess starches and sugars to be removed from the outer surface of the fry strips AND to keep the potatoes from browning prematurely from exposure to air. Covering in water helps the potato from turning a dark color.

Should you rinse starch off potatoes before frying? ›

By rinsing off the excess starch, you can achieve a better balance and control over the browning process, resulting in evenly cooked and beautifully golden fries. Another advantage of rinsing the potatoes is that the cold water makes the potato cells firmer, leading to crispier fries when fried.

What happens if you don't remove starch from potatoes? ›

Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

How long to soak potatoes to remove starch? ›

If you're pressed for time, the slightly sticky, cut potatoes should be soaked for a minimum of 15 minutes. However, a longer soak time may allow more starch to be removed. So, if you can prep the fries ahead of time, a few hours of soaking can help make them even crispier.

Can you soak potatoes too long for fries? ›

Only as long as you need to hold the potatoes until needed for the fry stage(s). This could be as little as a few minutes – to overnight storage in your walk-in cooler.

Why soak potatoes in salt water? ›

There's moisture naturally found in potatoes, and moisture is drawn to higher concentrations of salt. (This is a process called osmosis.) So, if you put the potatoes in a salt water bath, that will help draw out some of their moisture, resulting in crispier fries.

How do you dry potatoes before frying? ›

“They have the least amount of moisture, so when you fry them they'll be crispy on the outside and fluffy on the inside.” Drain the sliced potatoes on paper towels as well as you can before frying to ensure the crispiest texture. No thermometer? No problem.

Why won t my fries get crispy? ›

If they are still not crispy you might have skipped a step or you might not have let them cool down sufficiently. Make sure to cool them in a single even layer and also make sure that the oil has the right temperature. Or maybe you've used the wrong potatoes to make them.

How to make homemade fries taste better? ›

For a boost of flavor, try using beef tallow for your french fries. Beef tallow is made from rendered fat that has been cooked down to remove most of its impurities. Like other neutral cooking oils, beef tallow has a high smoke point at around 400 F.

How long to boil potatoes before deep frying? ›

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and cut into 1/2-inch cubes. Heat 1 tablespoon oil over medium-high heat.

How long to parboil potatoes before deep frying? ›

Stack 2 to 3 potato slices at a time and cut lengthwise into 1/4-inch-wide sticks. Cook potato sticks in boiling water just until beginning to soften, 3 to 4 minutes.

How do you soften potatoes before frying them? ›

Boil your cut potatoes in a pot of salted water for about 5 minutes, just until they begin to soften and become slightly translucent. Remove them from the water and let them air dry on paper towels.

Is it better to blanch potatoes before frying? ›

Fresh fries are best blanched. Get a crispier finished fry by blanching potatoes in hot oil to precook before peak periods and then finish in a final fry before serving. Fries are completely cooked during the blanching stage at a lower temperature to allow the potato to cook slowly without becoming golden brown.
