One of my all time favorite recipes to make is Shepherds Pie.

I love that’s it’s easy, cheap, filling and delicious.

Through a little bit of research and word of mouth from others I’ve found out that what my family has always called shepherd’s pie, we should actually be calling Cottage Pie, due to the fact that we like to use ground beef as the meat selection as opposed to the lamb that is found in a traditional shepherd’s pie. But for the sake of my sanity, because I know I’ll never remember to say the right thing after calling it something else for as long as I can remember, I’m going to continue to call it shepherd’s pie.

Any who.

This dish was always a staple in the menu at home growing up. Like I said it’s fairly cheap, when made in its simplest version (with just beef, corn and potatoes) and filling. Which were both HUGE pluses for my parents with four kids to feed each night!

Since leaving my parents house and starting a family of my own where I am the one expected to cook dinner most nights, the recipe has essentially stayed the same, but we have changed a little bit along the way to fit our tastes. Changed it for the better as far as I am concerned. This recipe is super versatile and easily adapts to whatever flavors you and your family find the most appealing.

When I make it at home I like to make enough so that we have leftovers for a few days, lunches for me and my son at home and something for my husband to take to work with him throughout the week. This dish re-heats well and maintains its taste throughout its time in the refrigerator.

Like I said before, the basic recipe is very easy to make.

Step One:

Peel, dice and boil potatoes to be mashed

Step Two:

While the potatoes are cooking, cook ground beef in skillet and drain

Step Three:

Add frozen corn to the bottom of an ungreased 9×13″ casserole dish

Step Four:

Spread out the cooked ground beef on top of the frozen corn in the casserole dish

Step Five:

Spread out the mashed potatoes on top of the beef

Step Six:

Sprinkle cheese on top (my favorite part!)

Step Seven:

Bake in oven for 20-30 minutes, until cheese is golden brown on top.

(My husband snuck some out of the corner of the pan before I could grab a picture of it all cooked!)

What we’ve done, and what you can try, to alter the recipe a little bit to make it even more delicious!

  1. Use a mix of creamed corn and frozen corn. (We have a great recipe for homemade creamed corn that we like to use! I’ll be posting about that in the future! )
  2. Add onion powder, garlic powder, or other seasonings to the meat as its cooking for a little extra flavor
  3. Use different vegetables, like peas, green beans, carrots or a mix of all of them!
  4. Make garlic cheesy mashed potatoes to use on top instead of just plain mashed potatoes.
  5. Use lamb, turkey or another meat to substitute the ground beef

Ingredients

  1. Potatoes approximately 15-20 (The potatoes that we had were pretty small, if yours a bigger you will probably need less use whatever variety you prefer)
  2. 2 tbsp. butter
  3. 1/2 cup milk
  4. 12-16oz bag of frozen corn
  5. 1 lb Ground beef
  6. 3/4 cup of shredded mozzarella cheese
  7. salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees
  2. Peel, cut and boil potatoes to be mashed
  3. While the potatoes are cooking, use a skillet to cook the ground beef on the stovetop
  4. Once the beef is cooked thoroughly, drain away any of the fat, and set the meat aside
  5. As soon as the potatoes are tender enough to be mashed, drain out the excess water, add the milk and butter (salt and pepper to taste), use a hand held mixer or a potato masher to mash the potatoes up enough so that no lumps remain. Add more milk and butter if needed.
  6. In a 9x13" casserole dish, spread the frozen corn on the very bottom, next spread the cooked ground beef and finally the mashed potatoes on top.
  7. Sprinkle cheese over the top and place the whole dish, uncovered, into the oven
  8. Cook approximately 25-30 minutes or until the cheese on the top becomes a nice golden brown
  9. Remove from oven and let cool 5-10 minutes, then dig in!
  10. Save any extras right in the casserole dish with tin foil over it or transfer into smaller dishes to place in the fridge to enjoy later!

Modification Options

  1. Use creamed corn in place of or along with frozen corn
  2. Try it with different veggie options! Carrots, peas, beans, or a mix of all of them.
  3. Add seasoning to the meat as it is cooking, garlic powder, onion powder, etc.
  4. Replace the ground beef with lamb or ground turkey!
