A slow cooker chicken mole recipe that is so easy to make.you'll have mole for dinner every night! We love mole but I have memories of my mom slaving over a hot stove to make a sauce from scratch and then cook all of the components of an excellent mole. We use a store bought jar of prepared mole to make this an easy meal for any weeknight. Serve the mole over rice with salad and a dollop of Knorr's creamy guacamole for a dish the whole family will love.
Slow cooker meats always come outjuicy and tender, making them easy to reheat and use in other meals down the line. This mole recipe makes enough mole for chicken mole for dinner one night and mole nachos for dinner the next night. We'll be sharing the mole nachos recipe tomorrow … you have NOT had nachos until you've had these!

How to make Chicken Mole in the Slow Cooker
This chicken mole recipe is a great dish to make in the slow cooker while you're going about your day. The house will smell so good when you get home! Here's how to make the recipe:
Place chicken in the bottom of the slow cooker.
Cover with spices, mole sauce, and vegetables.
Mix the water and bouillon until blended. Pour over chicken in slow cooker.
Cover and cook on high for 4 hours (or low for 8 hours) or until the chicken shreds easily with a fork.
Serve over rice with a salad and dollop of creamy guacamole.

How to make chicken mole in the slow cooker.

- 2 TBSP Knorr Caldo de Tomate con Pollo Bouillon
- 4 cups water
- 1 red onion, diced
- 1 – 8 oz jar prepared mole sauce
- 2 tsp kosher salt
- 2 tsp black pepper
- 2 tsp garlic powder
- Creamy Guacamole Recipe
Instructions
- Place chicken in the bottom of the slow cooker. Cover with spices, mole sauce, and vegetables.
