    Excellent meatloaf and so easy. I didn't put in pan but just shaped it into a loaf on a cookie sheet and put bacon over it. Family loved it! This is a keeper

    I am making this recipe but since I live alone, I bought some mini loaf pans to use so I can freeze them. The pans measure app. 5 1/2 x 3 x 2". How long would you suggest I bake them?

    I used to hate meatloaf, until I made this one! I've had many a friend ask for this recipe for many, many years and I always make a copy for them. The last 30 minutes of baking the meatloaf, I mix up some ketchup, brownsugar and some balsamic vinegar to taste, and put this on top of the meatloaf to get all carmelized.....make sure to save a lot of the sauce to put on your meatloaf sandwiches the next day, Yummy! I always serve mine with cheesy potatoes and fresh green beans or peas.

    I absolutely love this recipe and so do my friends and family! I have also modified this recipe over the years. Instead I have replaced the fresh bread crumbs with Italian bread crumbs and have added a tomato ketchup, brown sugar, dry mustard and balsamic vinegar glaze to the top of the meatloaf, it makes the best leftovers for sandwiches with mayo, cheese and extra glaze!

    I've been making this for almost 20 years - Use 3 lbs of ground beef - the sandwiches from the leftovers are fantastic! Here's my variation:2 pkgs Knorr's vegatable soup mix(or 3 envelopes of Lipton Vegatable soup mix)2 eggs1 cup milk4-5 slices fresh white or wheat bread torn into small pieces.In a large mixing bowl, combine soup mix, eggs, milk and bread. Mix with a wisk until combined. Add ground beef and blend thouroughly. Shape beef into a loaf on a foil lined roasting pan. Bake for approximately 1 1/2 hours @ 350. Top generously with ketchup and bake for another 30-45 minutes until done.Serve with beef gravy, mashed potatoes & corn. Enjoy :)
